Green Bean Pate
3 (9 oz.) pkgs. frozen
French style green beans
2 tbsp. onion flakes
4 hard cooked eggs,
finely chopped
1 tsp. salt
1/4 c. butter or margarine
1/2 tsp. nutmeg
1 tsp. pepper
Cook green beans according to package, except omit salt; drain. Cool and
chop fine. Melt butter in a large skillet, add onion flakes and cook over low
heat until lightly brown. Remove from heat, blend in salt, nutmeg and pepper.
Add onion mix to beans and blend well. Add eggs and mix well. Spoon into
mold. Can serve in mold or grease mold first and turn out. Garnish with
paprika and additional hard cooked sieved egg yolks. Serve hot or cold on
crackers or toast.
