Gardening - Beets
You can have several crops of beets this way.  I always prefer to plant
the beet seeds instead of doing a live transplant.  The only time I will
do a live transplant is when I thin my beet row and the plants I remove
go into another row.  To speed the germination of your beets, you can
soak the seeds for a day before you plant.

If you have ever noticed the tops of your root crops that get exposed
to the air and the sun turn green on you?  To avoid this situation, you
can mulch the tops to prevent this from happening.  This will also keep
the soil and your root crops cooler.  I would apply fertilizer right when
I make my planting and then again when you thin your rows.    If you
get dry weather on your beets, make sure you are keeping them moist
during this period.  If you do not, your beets could split on you.
